Recipes for Independence Day

1. Tiranga Sweet Dhokli

Ingredients:

  • Parwal (Pointed Gourd): 500 gm
  • Khoya (Mawa): 200 gm
  • Sweet Mawa: 250 gm
  • Saffron: 1 gm
  • Sugar: 1000 gm
  • Paan Leaves: 50 gm
  • Gulkand: 50 gm
  • Mukhwas: 20 gm

Steps:

  1. Peel and core the parwal, then soak them in ice water.
  2. Cook the parwal in sugar syrup until they become soft.
  3. Remove them from the syrup and let them cool in a dry, cold area.
  4. Prepare the filling by making gulkand mawa, saffron mawa, and sweet paan khoya.
  5. Cook each mixture until smooth.
  6. Fill the parwal with three layers: saffron mawa, plain mawa, and paan mawa.
  7. Garnish with sweet mukhwas.

2. Kaju Suran aur Mutter ki Galouti

Ingredients:

  • Green Peas: 200 gms
  • Cashew Nuts (Broken): 150 gms
  • Raw Jackfruit: 2 tbsp
  • Chopped Green Chilies: 1 tbsp
  • Chopped Ginger: 1 tbsp
  • Chopped Garlic: 1 tbsp
  • Garam Masala Powder: ½ tbsp
  • Jeera (Cumin) Powder: ½ tbsp
  • Chaat Masala: ½ tbsp
  • Yellow Chili Powder: ¼ tsp
  • Saffron: ⅛ gm
  • Salt: ½ tsp
  • Nutmeg Powder: 1 pinch
  • Roasted Potato: 30 gms
  • Lemon Juice: 1 tsp
  • Ghee: 10 tbsp

Steps:

  1. Saute green peas, roasted potatoes, boiled and mashed jackfruit, and channa dal together.
  2. Blend the mixture with all the ingredients and ghee, setting aside some ghee for frying.
  3. Place the mixture in the refrigerator and let it rest for at least 4 hours.
  4. Shape the mixture into medium-sized tikkis, then shallow fry them in ghee.
  5. Serve hot, preferably with parathas.
